Welcome to the weekend friends. I’m sorry this post is late getting to you this week. It has been one of those weeks. I sat down yesterday to try and write and I was so tired and mentally spent that I literally could not think of one thing to write. I’ll try and make up for lost time while my baby is making up for lost naps. 2.5 hours and still napping strong!
I thought today I would share a super easy easy recipe. Peach Cobbler Cake.
Now if you are like me the thought of peach cobbler sounds delightful but the thought of cooking it in a dutch oven, heating coals, and cooking it, well that scares the craving right out of me. Add to that the fact that we don’t exactly have a dutch oven or anywhere to cook with one if we did.
Peach cobbler is always a summer treat and is great on a camping trip. But our camping trip isn’t for another week and a half and we aren’t taking any dutch ovens. I felt like I was going to be missing out on a big piece of summer.
To remedy this craving I decided to make peach cobbler cake (and to eat it before our trip). This recipe is 4 ingredients all of which I have on hand, and you probably do too. I made mine with peach jam, because I didn’t want to go to the store for one single can. But if you have fresh or canned peaches you can sub them in for the jam.
A quick 20 minutes in the oven and serve with some vanilla ice cream. Bamm. You are welcome. The best part is you won’t have to worry about cleaning, storing, or caring for a dutch oven.
I love this recipe because it reminds me a bit of apple crisp with the added oats. It’s like a match made in heaven, cobbler meets apple crisp. You can sub the peaches for any type of jam or canned fruit. Apples, raspberries, etc. Did I mention there is no added fat? So go ahead and throw a big scoop of ice cream on the top and soak up a piece of summer!
Yield: 12 servings (9 x 13 pan)
Time: 30 minutes
- 1 yellow cake mix
- 2 1/2 c instant oats
- 3/4 c apple sauce
- 1 1/2 c peach jam (or canned peaches)
- ice cream or whipped cream
- 9 x 13 pan
- Step 1
Preheat oven to 375. Grease a 9 x 13 pan and set aside.
In a large bowl combine the cake mix, oats, and apple sauce. Mix just until the mixture starts to ‘clump’.
- Step 2
Pour 2/3 of the oat / cake mix mixture into your greased pan. Using your hands press the mixture into a soft smooth crust.
- Step 3
Pour the jam or canned fruit over your smooth crust. Sprinkle the remaining 1/3 oat / cake mix mixture over your fruit. Gently press.
- Step 4
Bake at 375 for 18-22 minutes or until crust begins to golden. Cut into pieces and serve with your favorite topping.
