ASIAN CHICKEN

You may have picked up a pattern as I share recipes.  In our house we eat a lot of Asian and Mexican dishes.  This recipe is no different.  So if your are looking for a night of better than take-out give this chicken a try.  It is not the same as Panda Express, but in my opinion this is sure a lot better. The soy sauce, ginger, and rice vinegar will take you on a journey across the world.  This chicken is a recipe I adapted from one my mom gave me.  She may have gotten it from our neighbor I can’t really remember.  It is a perfect blend of Asian goodness.  We like to serve this dish with rice and vegetables.

Yield: 4 servings

Time: marinade 1-2 hours, 30 minutes to bake

 

INGREDIENTS:

  • 4 chicken breasts
  • 1/3 c soy sauce
  • 2 T sugar
  • 2 T brown sugar
  • 1/2 tsp ginger
  • 1/2 tsp garlic
  • 2 T rice vinegar
  • 1/2 c water

 

DIRECTIONS:

  • Step 1

Combine all ingredients and let marinade 1-2 hours. The longer the better, you want the flavor to seep into the center of the chicken.

  • Step 2

Cover chicken and bake chicken for 30 minutes or until done.
