Chicken enchiladas were a bit of a foreign food to me until the last few years.  I’m sure that growing up my mom tried to make them and I refused to eat them.  I had a thing about melted cheese and sauce… Rather than make dinner a fight we didn’t really ever have chicken enchiladas.  I decided to give them a shot in the last little while and have really enjoyed them.  We still don’t have them super often but as an occasional shuffle of our regular meals we will indulge in some creamy goodness.  Enchiladas sure aren’t the prettiest food out there but if you are looking for some heart warming Mexican, they will do the trick.


Yield: 4 servings (8 enchiladas)

Time: 40 minutes


  • 1 lb chicken
  • 2 T olive oil
  • 1/2 tsp cumin
  • 1/2 tsp red chili powder
  • 1/2 tsp pepper
  • 1 tsp salt
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/2 green, yellow, or red pepper, chopped
  • 1 can black beans, rinsed
  • 2 T lime juice
  • 1 c sour cream (plus more for garnish)
  • 2 c shredded cheese, divided
  • 8oz tomato sauce
  • 8 flour tortillas
  • 1 can red enchilada sauce
  • cilantro to garnish


  • Step 1

Preheat oven to 375 degrees

Cook chicken in oil in a large saute pan.  Prepare the onion, garlic, and pepper, set aside until chicken is mostly cooked.  Add seasonings, onion, garlic, and pepper to chicken.  Saute until onion is tender.  Add black beans and heat until warm.

  • Step 2

In a bowl combine lime juice, sour cream, 1 c shredded cheese, and tomato sauce. Add sauce to the chicken and black bean mixture.

Microwave the tortillas for 30 seconds, until soft.  Spoon filling into tortillas and roll.  Place in a 9×13 baking dish.  Continue to fill and roll tortillas until mixture is gone.

  • Step 3

Top enchiladas with red enchilada sauce and remaining shredded cheese.

Bake at 375 for 15-20 minutes, until cheese is melted and bubbly. Garnish with sour cream and fresh cilantro.
