If I were to rank the favorite meals at our house, this would definitely be in the top 10.  My husband loves it, I love it, they are fun to make. What more could you ask for? A tostada is like an open taco.  Maybe you’ve seen or tried one before at Cafe Rio.  Piled high with delicious toppings the name actually comes from frying the tortilla.  In this recipe however there is no deep fried tortillas.  Just pure goodness. I love the freshness of the ingredients.  If you are looking for a fresh dish full of healthy toppings, try this.  Nothing is dripping in grease or smothered with cheese.  You won’t need to crack open a can of anything. You can relax because you won’t have to heat up the oven.  This recipe is almost as whole as you can get. The chicken in this recipe is  based on Our Best Bites Taco Chicken.  It is such a versatile recipe. Yield: 4 servings

Time: 30 minutes

INGREDIENTS:

CHICKEN: (adapted from Our Best Bites Taco Chicken)

  • 2-3 chicken breasts
  • 1 lime
  • 2 T red wine vinegar
  • 1 clove garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp salt

TOSTADA TOPPINGS:

  • chicken
  • 4+ tortillas
  • 2 tomatoes, diced
  • 1 lime
  • fresh cilantro
  • shredded cheese
  • lettuce, chopped
  • salsa
  • avocado, diced
  • jalapeno jelly
  • sour cream
  • beans
  • rice

DIRECTIONS:

  • Step 1

Place chicken in a large zip-lock bag. Juice lime.  Add red wine vinegar and minced garlic.  Pour liquid over chicken and refrigerate at least 15 minutes.

In a small bowl juice the other lime. Add diced tomatoes. Sprinkle with garlic salt and stir. Wash and prepare remaining tostada toppings.

  • Step 2

Remove chicken from bag and discard marinade.  Saute chicken. Combine chili powder, cumin, salt and pepper and season chicken.  When chicken is cooked shred chicken using two forks.

  • Step 3

Using a large frying or saute pan heat tortillas over medium heat until the tortillas are crispy.  Another fun method is to use the backside of a muffin tin and bake tortillas until dry and crisp to shape into wavy bowls.

Top tortillas with desired toppings.
