COCONUT WALNUT FROSTING

If you remember yesterday I shared about all of the birthdays going on in my family this month. I shared my favorite Easy Chocolate Frosting recipe. Well today I decided to finish the birthday series and share how I made the coconut walnut frosting for my husband’s German chocolate cake. His family calls it toenail frosting, but don’t let that scare you. This frosting is as good as it gets! I made it slightly healthier by doing less butter than the traditional recipe, but really should you be required to worry about health and calories on your birthday? You can choose to sub out the walnuts for pecans if you wish.

Yield: about 2 cups

Time:10 minutes prep, 30 minutes to cool

INGREDIENTS:

  • 1 c sugar
  • 10 oz evaporated milk
  • 1/4 c butter
  • 2 eggs, beaten
  • 1 tsp vanilla
  • 1 c chopped walnuts
  • 1 c shredded coconut

DIRECTIONS:

  • Step 1

In a sauce pan, bring sugar, evaporated milk, butter, and beaten eggs to a boil over medium heat. Stir mixture constantly, watch because it may splatter a little. Once boiling turn heat to low and stir for 5-8 minutes more.

  • Step 2

Remove pan from heat. Add vanilla, chopped walnuts, and shredded coconut. Allow mixture to cool completely before frosting, about 30 minutes.
