IMG_5525.JPGThis recipe comes from my mom’s collection. This cornbread brings back my childhood on a cold winter day. I loved eating her cornbread and chili growing up. I love to top my cornbread with honey. As time has progressed I sometimes try to make a slightly healthier version so I included that too.

Yield: 6 servings (9×11 pan)

Time: 40 minutes

INGREDIENTS:

  • 1/2 c melted butter
  • 2/3 c sugar
  • 2 eggs
  • 1 c butter milk
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 c cornmeal
  • 1 c flour

DIRECTIONS:

  • Step 1

Preheat oven to 375 degrees

Spray baking dish with cooking spray

  • Step 2

Mix melted butter and sugar. Add eggs and buttermilk. Mix again. Add salt, soda, cornmeal and flour. Mix again.

Pour into baking dish. Bake 375 degrees for 30 minutes.

A HEALTHIER ATTEMPT

INGREDIENTS:

  • 1/4 c olive oil
  • 2/3 c sugar
  • 2 eggs
  • 1 1/4 c milk
  • 1/2 tsp lemon juice
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 c cornmeal
  • 1 c flour

*Mix oil and sugar. Add eggs, milk, and lemon juice. Mix again. Add salt, soda, cornmeal and flour. Mix again.
