CUCUMBER LIMEADE

I thought today I would keep the cool summer drinks rolling. I shared my Jamba Juice Tropical Colada copycat recipe on Thursday. It is still 90+ degrees outside and so I am sharing another favorite at our house. This super easy cucumber limeade. This drink takes only 2 minutes to make and is a refreshing spin on a classic limeade.  

 

Early this spring I happened to be at my mom’s house celebrating her birthday when a family friend brought by some cucumber limeade in a cute little pitcher. What a perfect gift right?!? Well I think I drank as much limeade as my birthday mother did that day. I love this drink and have made it all summer long! I have based this recipe on that original drink with a few minor changes.

The limeade is easy to make and is perfect for serving at a party, end of summer BBQ or just a relaxing afternoon on the patio. I hate to admit but I can drink this whole thing by myself! I hope you find it that good too!  I had some friends over last week and this drink was the perfect thing to serve. Cool and refreshing and yet easy to make!

Yield:  2 liters

Time:  5 minutes

INGREDIENTS:

  • 2 liters Fresca or diet Sprite
  • 6oz limeade frozen concentrate (1/2 of a can)
  • 1 c cucumber slices
  • ice

TOOLS:

  • pitcher

DIRECTIONS:

  • Step 1

Spoon 1/2 of the limeade concentrate into a large pitcher. Save the rest of the can for another day. Wash and cut cucumber into 1/4″ slices, set aside. 

Add Fresca or diet soda to the limeade concentrate. Stir until the concentrate has dissolved. Add cucumber and gently stir. Add ice and allow limeade to sit for a few minutes before serving. The longer the limeade sits the better the flavors combine!  

I could seriously drink this every day!
