As you may have guessed by now I love soup.  I don’t reserve a bowl of warm goodness just for winter either.  This soup is by far one of the favorites at our house and is eaten year round.  It slightly resembles the tortilla soup at Zupas if you have had it before.  This broth based flavorful soup will be an easy family favorite in your home too.  It is quick and easy to make but if you are looking for even easier, throw it in the slow cooker for an even easier prep. It is delicious with fresh ingredients but canned works well too. Don’t let the long list of ingredients intimidate you, this is super easy and quick to make. Give this easy soup a try for your next fiesta night.



Yield: 6 servings

Time: 30 minutes


  • 2 chicken breasts
  • 1 T oil
  • 1 T red wine vinegar
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1/2 tsp cumin
  • 1/4 tsp red chili flakes
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 onion, diced
  • 1 jalapeno, minced & seeds removed
  • 4 c chicken broth
  • 1 1/2 c diced tomatoes (or 1 can diced tomatoes, I like to use Rotel- Mild Tomatoes)
  • 1 can black beans
  • 1 1/2 c corn (or 1 can of corn)
  • 2 fresh limes
  • Optional Garnishments:
    • avocado
    • shredded cheese
    • sour cream
    • chopped green onion
    • crispy tortilla strips
    • fresh lime
    • fresh cilantro
    • fresh tomato


  • Step 1

Heat a large pot over medium high heat. Add oil and cook chicken. Season chicken with spices, salt and pepper.

While chicken is cooking prepare all other ingredients. Wash and chop the jalapeno, onion, tomato, and any garnishments. When chicken is complete shred chicken or cut into bite-size pieces. Add onion to pan and saute until translucent, add jalapeno and saute 1 minute more.

  • Step 2

Add chicken broth, tomatoes, black beans, and corn.  Simmer for at least 10 minutes.

Just before serving juice the two limes into the soup.  Serve and garnish with desired toppings.
