A few years ago I heard about a restaurant called Chipotle.  When I was in New York I swore there was one on every corner. Now I live just down the street from one.  I love a lot of things about Chipotle, but I especially go there for their chips, salsa, and guacamole. I love to get Chipotle’s corn salsa on my salad bowl.  I decided when we made street tacos the other night to give corn salsa a try.  The rest is history.

This salsa is great to eat with chips, great on street tacos, or I even tried mixing it with rice for a sweet cilantro rice to go with my Mexican dish in an upcoming post. Give this salsa a try, you will love it.

Yield:  2 cups

Time: 10 minutes


  • 1 can sweet corn
  • 1/2 red onion, chopped
  • 1 jalapeno pepper, diced, seeds removed
  • 2 T cilantro, diced
  • 1-2 limes
  • 1 T sugar
  • 1 t salt


  • Step 1

Drain corn and pour into a medium bowl. Wash and chop onion, jalapeno, and cilantro. Add chopped ingredients to the corn. Juice 1-2 limes over ingredients. Sprinkle with sugar and salt. Mix and let stand a few minutes before serving.
