Do you ever have a meal that you are trying to prepare but are short on time, energy, stove space, pans, or any other reason we often skip a vegetable? On one of those nights, or any night, this is a side for you. This zucchini is an incredibly easy side dish for the chef and non-cooker alike. It takes a matter of minutes to prepare and you do not have to worry about anything burning. All you need is a glass baking dish and a microwave. That’s right a microwave. If cooking in a microwave is right up your alley, keep reading.


Yield: 4 servings

Time: 3 minutes prep, 6-12 minutes to cook


  • 1 medium zucchini
  • 1 medium yellow summer squash
  • 1/2 medium onion
  • salt and pepper to taste


  • Step 1

Wash all vegetables.  Slice zucchini, squash, and onion into 1/4″ round slices.

  • Step 2

In a microwave safe dish layer zucchini, squash, onion, and salt and pepper. Cover. You do not need to add water or anything else.

  • Step 3

Microwave on High for 3 minutes at a time. Carefully remove cover. Stir and continue to repeat at 3 minute increments until you have reached your desired done-ness.
