Now I don’t know where German Pancakes had been all of my life but the first I remember having was in one of my cooking classes at the university. I still remember the first time I watched as the pancakes climbed high above the pan. I was intrigued to say the least. They taste delicious and because of that they have been a breakfast staple ever since. Whether you are making them for a weekend brunch, or a regular old morning, these healthier (if you use olive oil like my husband does) German Pancakes are sure to do the trick. We also make them for the nights we have breakfast for dinner. Now it says it can serve four, but in reality my husband and I can eat the whole pan. Top your pancakes with syrup, fruit, whipped cream, or anything else you desire. I promise these pancakes will make your morning!

Tip: For an easy make, try mixing them in the blender like I did here with crepes.

Yield: 2-4 servings

Time: 30 minutes


  • 4 eggs
  • 2/3 c milk
  • 2/3 c flour
  • 1/2 tsp salt
  • 3 T oil or butter
  • syrup and toppings

  • Step 1

Preheat oven to 450 degrees. Place butter or oil in a glass 9×13 baking dish. Allow butter to melt in warm oven.

Whip eggs until lemon colored. Add milk, flour and salt.

  • Step 2

Pour batter into pan with melted butter / oil. Bake at 450 for 15-20 minutes until top is firm and golden.

Cut and serve with syrup.
