Yesterday I shared one of my favorite recipes, Moroccan Chicken. Today I’m sharing how to prepare the couscous to serve with the chicken.

This is should be a post done by husband. He lived 2 years in France and ate a lot of couscous. He claims this is the real way to make couscous. To be legit we should share one big platter as a dinner plate, everyone eating off of the same dish.  Maybe someday.

I had no idea how easy couscous was to make. I definitely recommend it. It starts out looking like the amount won’t be enough, but it will continue to grow.  I think it even continues to grow in your stomach.  I have never left a couscous meal feeling hungry.

This quick side will take less than 10 minutes to prepare and goes well with any stew like dish served over the top. Give it a try.  Couscous can be found typically near the rice in your local supermarket or in the bulk section if you have one.  I always buy golden couscous for this dish.

Yield: 4 servings

Time: 10 minutes


  • 3 c water
  • 2 c golden couscous
  • 1 tsp salt



  • Step 1

Place couscous in a medium-large bowl. Bring water and salt to a boil. Pour most of the water over couscous and gently stir it in.  Allow it to sit for 2 minutes.  If couscous is still dry, add the remaining water.  Let stand 5 minutes. Stir couscous before serving.
