One of the hardest things for me is Mom lunches.  I love to cook but cooking for one person is just not the same.  It is hard finding something to make for myself beyond a sandwich.  If I were cooking for even two people it would make me want to actually prepare something. Instead I would be happy skipping from breakfast to dinner if my body would let me.  If we have no left overs I often search the fridge and eat an assortment of foods.  Some days I have a sandwich or a salad, other days its crackers and cheese, fruit and yogurt, you get the idea.

I’m sure many of you with children at home run into the same thing. As a solution to mac and cheese or a Pb&j again give these mini pizza bites a try.  One child wants ham the other wants pepperoni? Not a problem. Served on bagels, they are the perfect personal pizza.  I used mini bagels that I got at my local Smiths. You can use regular size bagels as well. Perfect for little mouths, easy to customize, and fun to make these pizza bites will be a welcome lunch addition.


Yield: 3 servings

Time: 10-15 minutes


  • 6 mini white or wheat bagels (or 3 regular size)
  • 3/4 c sauce
  • 3/4 c shredded cheese
  • desired toppings (examples)
    • tomatoes
    • mushrooms
    • spinach
    • fresh basil
    • ham
    • pineapple
    • pepperoni
    • olives
    • sausage


  • Step 1

Preheat oven to 400 degrees. Prepare desired toppings.


  • Step 2

Open bagels and lay flat. Top with sauce, cheese, and desired toppings.  Toast in oven until cheese is melted (about 5 minutes).
