This is one of those foods that you probably won’t believe how good it is until you try it. I absolutely love this roasted asparagus. Its a little bit excessive how much I love it. My husband and I can eat an entire bundle of asparagus in one sitting. Now if you know asparagus, you know how smelly that can be. It just tastes so good! I love to make this as a quick side that you can prepare and then forget and devote my attention to other things while it bakes. I also love to take it to parties and get-togethers because it is really that good. I promise, if you give it a try it will change your mind about asparagus.
Yield: 2-4 servings
Total Time: 40 minutes, (10 minutes prep)
- 1 bundle asparagus, washed
- 1-2 T olive oil
- salt and pepper to taste

Preheat oven to 400. Line a cookie sheet with parchment paper or foil (parchment paper works best). Wash and prepare asparagus.

Toss asparagus with olive oil. Season with salt and pepper to taste. Bake about 30 minutes or until tender (depending on the thickness of your asparagus it may need less), stirring occasionally.
