Oven Roasted CauliflowerThis is a great go-to side. I can eat this cauliflower like candy. It’s a quick and almost forget about it dish which gives me time to focus on the other food I’m preparing. I admit it’s not the most beautiful looking dish, but the taste will blow you away. It sure is a favorite at our house, my husband and I can eat an entire head of cauliflower in one sitting!

Yield: 2-4 servings

Total Time: 40 minutes, (10 minutes prep)


o   1 head cauliflower, washed and chopped into bite-size pieces

o   Olive oil, to coat (1-2 Tabl)

o   2 cloves garlic, minced or pressed

o   salt and pepper to taste


o   Step 1

Preheat oven to 400. Wash and prepare cauliflower.

Toss cauliflower in a large bowl or gallon zip lock bag with olive oil. Add garlic and  continue to toss.

o   Step 2

Place cauliflower pieces on a lined cookie sheet. Parchment paper or foil both work.

Sprinkle with salt and pepper to taste. Bake 30-40 minutes or until tender, stirring occasionally.
