It is almost the weekend and if you are feeling as burnt out as I am this week try making something easy. No need for take-out because this recipe takes only minutes and is based on things you find in your fridge. You shouldn’t have to go buy anything! I’m sharing a quick and easy family favorite that week make when we are in a pinch, or sometimes not in a pinch too. So without further-ado today we are making ham fried rice.
This recipe is truly based on things we have in on hand in our fridge, which means it changes a little each time I make it. The secret to the best ham fried rice you have ever had is to use leftover rice. So cook up a big batch when you are making your next meal and save the rest for ham fried rice.
I learned this ham fried rice recipe from my husband. He learned to make it from one of his roommates back when he lived in France. This guy would prep the meals for the next day every night before he went to bed. When he made ham fried rice he’d cook up a pot of rice and stick it in the fridge to be used the next day. It is well worth the effort but the good news is you don’t need to stay up the night before making rice, just save your leftovers.
This ham fried rice recipe is easily altered and should be made to fit your tastes and preferences. I would recommend doing 1 egg per cup of rice but that can be easily altered to fit what you like. The same goes for the amounts of anything else, just adjust to fit your liking. That’s the beauty of this ham fried rice, its pretty hard to go wrong!
Yield: 2 servings
Time: 15 minutes
- 2 c pre-cooked rice (refrigerated leftovers are perfect!)
- 1/4 c chopped peppers
- 1/4 c chopped carrots
- 1/4 c chopped ham
- 1-2 eggs, lightly beaten
- 2-3 T soy sauce
- salt and pepper
- any additional vegetables

Prepare rice and allow to cool. Or the easiest way, and I actually think it tastes the best too, is to use left over rice. Old refrigerated rice from a day or two ago is perfect for this recipe!
Wash and chop all vegetables and ham. Feel free to get creative at what you throw in. I always just empty the vegetable drawer and put in whatever we happen to have.
Saute vegetables over medium high heat in a large saute pan with a little olive oil. Cook for 3 minutes. Add ham and cook for 1 minute more.

Add the cold rice to the saute pan and cook until warm, continually stirring.
Add the lightly beaten egg(s) and stir until egg is evenly distributed throughout the rice. Cook for an additional 3-5 minutes or until egg is done.
Add the soy sauce and stir until evenly well mixed. You may add more or less soy sauce depending on your preference. I personally don’t like a lot of soy sauce. Salt and pepper to taste before serving.
I find the best ham fried rice is one loaded with vegetables and new things, try adding peas, green onion, bits of broccoli or zucchini, a variety of peppers, etc.
