SWISS CHICKEN CASSEROLE

This is one of those go to meals for everything at our house. My family called it Swiss Chicken, I’ve also heard Chicken Cordon Blu Casserole. Whether you are looking for an easy meal to fix tonight, a meal to freeze for later, a dinner to take to someone, or a meal to add to your rotation, this can not be beat. It tastes good, is easy to make, and everyone enjoys it. I made two foil pans of this and froze them for when I had my baby. Just up the cooking time since its frozen and you are set! I’m not much of casserole person but I do enjoy this meal! We sometimes serve it with rice, but with stuffing you can get away with just adding a vegetable side and calling that good. Yield: 4 servings

Time: 10 minutes prep, 40 minutes to cook

INGREDIENTS:

  • 4 chicken breasts
  • 4 slices of ham
  • 4 slices of Swiss cheese
  • 1 can low-fat condensed cream of chicken soup
  • 1 box of stuffing

DIRECTIONS:

  • Step 1

Pre-heat oven to 350. Place chicken in a baking dish or pan. Season with salt and pepper. Layer ham and then cheese on top of chicken. Spread condensed cream of chicken soup over meats and cheese.

  • Step 2

Prepare box stuffing according to directions. Spread evenly on the top of your pan. Cover with lid or foil and bake 35-40 minutes, or until chicken is done.
